濃い豆乳を備長炭で温めながら、表面に張る湯葉を一枚一枚箸で引き上げて召上っていただきます。 最初のものほど、たんぱく質・脂肪を多く含み、きめ細かい湯葉ができます。後になるにつれ甘味が増して、だんだん褐色になりとろんとしてまいります。これを甘湯葉と言います。 最後は鍋に付いたお焦げを楽しんで頂きます。

The thick soy milk is heated over binchotan charcoal while the yuba leaves are pulled up one by one with chopsticks. The first yuba contains more protein and fat, and the finer the yuba is, the sweeter it becomes. Later, the sweeter the yuba becomes, the browner it becomes, and the thicker it becomes. This is called ama-yuba. At the end, you can enjoy the scorched bits on the pot.
